Cooking Style: Whole wheat oatmeal pancakes

Happy Wednesday!
The great thing about being up early, even on the weekends, is making homemade pancakes! I'm always on the hunt for great and healthy pancakes. I made this before church on sunday and they were really good! I will be making these again.

Whole Wheat Oatmeal Pancakes

Yield: Approx. 6 pancakes

1/2 cup non-fat vanilla or plain yogurt (I used plain Greek yogurt)
1/4 cup milk (more if the batter seems thick)
1 egg
1 tbsp vegetable oil
1 tbsp honey
1 tbsp brown sugar
3/4 cup whole wheat flour
1/2 cup old fashioned oats
pinch salt
1/4 tsp baking soda
1 tsp baking powder
pinch cinnamon
pinch nutmeg

Whisk together the yogurt, milk, oil, honey, and egg in a large bowl.
Stir the remaining ingredients together in a medium bowl, then add to the wet ingredients and mix gently. If the batter seems especially thick, add a few tablespoons of milk until you reach desired consistency.
Heat a non-stick skillet and spray with cooking spray.
Ladle out 1/3 to 1/2 cup of batter for each pancake and cook until golden brown on the bottom. Flip and cook an additional 2-4 minutes, or until golden on both sides. Repeat for each pancake.
Serve with desired toppings. (Butter, Syrup, Strawberries, etc.)
