Recipe Tuesday: Peanut butter oatmeal cookies





I was looking for a flour less recipe on Pinterest and stumbled upon this one. I love adding peanut butter to my cookies and you can't go wrong with oatmeal. I will add cranberries next time to make them a little more sweet.

Flourless Oatmeal Peanut Butter Cookies

(Makes Approximately 12-16 cookies)



Ingredients:
1 1/2 cups quick oats (I used rolled oats)
3/4 cup creamy peanut butter
2 eggs
1 tsp vanilla extract
1/2 cup brown sugar
1 tsp baking soda
1/2 tsp salt
1/2 c chopped walnuts or pecans



Directions:

1. Preheat oven to 350 degrees

2. In a large bowl, combine the eggs, sugar, peanut butter, and vanilla and mix

3. Next, add the oats, salt, and baking powder and stir

4. Roll the dough into balls and place on a cookie sheet lined with parchment paper

5. Bake for approximately 10-12 minutes. Remove from the tray and let cool for 5 minutes and serve
