Recipe Tuesday: Easy salsa chicken





I've taken the crock pot out (after wiping off all the dust!), and I have my crock pot recipes ready to go this week.
I don't know why I even stop using it from time to time. And since I need all the time saving tips I can get now that school is back, I'm on a roll with the easiest crock pot recipes I can get my hands on.

Ingredients:
4 pieces of chicken breast
1 jar of salsa
1 can of black beans (I don't like to use many canned items, but if I do, I like the Simple Truth Organic brand from Kroger)
1 bag of frozen corn
1 tub of cream cheese (I used reduced fat)

Throw it all together in the crock pot and cook on low for 6-8 hours or high for 4.
That's it! Super easy and simple! We served it with tortilla chips but you can serve it over whole grain rice or tortillas.
