Banana nut chocolate chip muffins

In case you didn't know, I love sweets. I'm always looking for new recipes or perfecting the ones I have. I found this new recipe and adapted it with my own usual ingredients. It is absolutely delicious! I usually bake with King Arthur's Whole Wheat flour to make it a tad healthier. I also added pecans to add another yummy ingredient.

Banana Chocolate Chip Muffins

makes 12-16 muffins, depending on the size of the pan

1 egg
1 egg yolk
2 banana, mashed {about 3/4 cup}
1/2 teaspoon pure vanilla extract
1 cup sour cream
2 1/2 cups unbleached all-purpose flour
1/4 teaspoon baking soda
2 teaspoons baking powder
1/4 teaspoon kosher salt (I always omit salt from my recipes)
3/4 cup sugar
1/2 cup (1 stick) cold unsalted butter, cut into 1-inch cubes
1 cup chocolate chips

Preheat the oven to 375 degrees Fahrenheit. Generously butter or spray the top and cups of a 12-cup muffin pan.

In a medium bowl, combine the egg, egg yolk, bananas, vanilla extract, and sour cream/yogurt. Whisk until blended.

Sift the flour, baking soda, and baking powder together into the bowl of a stand mixer or a large bowl.

If using a stand mixer, add the salt and sugar to the dry ingredients and mix with the paddle attachment on low speed for about 4 minutes, or until butter is the size of small peas. Mix in the chocolate chips. Make a well in the center and pour in the wet ingredients. With a few rotations of the paddle, gently combine, taking care not to overmix the batter.

If mixing by hand, add the salt and sugar to the dry ingredients and stir with a wooden spoon until combined. Add the butter and cut it in with a pastry cutter or two dinner knives until it is the size of small peas. Mix in the chocolate chips. Make a well in the center and pour in the wet ingredients. With a few stroked of the spoon, gently combine, taking care not to overmix the batter.

With an ice cream scoop or large soup spoon, fill the prepared muffin cups until the batter just peeks over the top of the pan. Bake on the middle rack of the oven for about 20-30 minutes, or until the muffins are golden brown, firm, and springy. Let cool in the pan for 10 minutes. Unmold the muffins onto a wire rack to cool.

Weekend Happenings: Pool Time

We decided to stay home this weekend because of all the bad weather we've been having in Texas. We woke up today to our phones going off to a tornado warning, along with horrendous rain and thunder. Nothing like a 6am wake up call to a tornado warning! And Princess (our 10 year old Akita mix ended up in our bathroom. She usually sleeps in her opened crate every night. But she was not playing around this morning waiting for a tornado to pass by!) We decided to wake up the twins since they sleep upstairs pretty much on their own. We have a 6 year old that ends up in our bedroom almost every night. We huddled in the living room watching the news and waiting for the danger to pass by. We missed church this morning and napped for 3 hours. And then we caught a bit of break from all this crazy weather, and decided to take the kids to the pool along with my parents, sister and nephew.

Happy Saturday!
I got to wear jeans and a jacket on a rare cool morning yesterday. It was in the 60s! B and I dropped off Jayden at school, and the twins at my parents and off we went to watch Pitch Perfect 2. We loved it! We were supposed to go out of town with my in laws but decided to stay in town because of the weather. It's supposed to be a little bit better in Houston than where we were headed. Hoping to enjoy some pool time and family today!

A blush moto leather jacket and a giveaway

Happy Monday!
There is something about blush and white together that screams Spring. I added turquoise accessories to add a bit of color to my outfit. I love this dress from Old Navy- works great for work or weekend, dressed up or down. And these beautiful turquoise pieces are from the new Summer line from Stella & Dot. I picked up this moto leather jacket from the last days of Piperlime (at a steal for $45!). I linked up a faux leather one that looks pretty similar. This great jacket is light enough that will work great for our hot Spring days and late fall.

It's Friday and Mother's Day weekend! I went to a Mother's Day breakfast with my oldest, Jayden, this morning. All the kids made books about their moms. It was the sweetest thing ever and I may have shed a tear or two. Jayden drew a picture of me wearing my favorite necklace. His teacher asked him which one and he told her, oh no she has a lot :) Stella & Dot Stylist problems, let me tell ya!

I hope you have a wonderful weekend celebrating with your mom, being a mom or reminiscing with loved ones. I plan to have a very low key weekend with my mom and sister, and also with my mother in law and all our families.

About the outfit, here is another piece I picked up from Piperlime during their last few days. Love this top! So unique. Honestly the reason why I fell in love with
Piperlime in the first place. They had such great unique, yet affordable pieces.
